Faraona alla creta (Guinea fowl in clay)


Preparation. After cleaning the guinea fowl, is rubbed into the inside, is preparing a bed of soft clay with sprigs of rosemary, sage and oregano powder. After the guinea fowl wrapped in wax paper, is covered with the clay and put in the oven. After cooking, it breaks the clay, remove the paper and serve.
Ingredients. Guinea fowl, butter, salt, pepper, rosemary, sage, oregano, clay.
Area of production. The province of Piacenza and in particular the coastal area of the river Po
History. Plate of Lombard origin, in areas along the river Po clays are suitable to wrap the guinea fowl and to form the housing more affordable for cooking.
