Maccheroni alla bobbiese (Maccheroni Bobbio's way)

 

Preparation. Work the flour with water, eggs and salt until a smooth mixture. Pull pieces of dough and make it thin strips about an inch wide. With a knife cut portion 3-4 cm long and wrap around the iron for the knitting so as to obtain maccheroni. Once dried, boil them in salted water and, when ready, seasoned with a sauce made ??with olive oil, butter, dried mushrooms, previously soaked and tomato sauce. Before serving should be sprinkled with Grana Padano cheese.
