Mosto Cotto (Cooked must)


It's a typical dessert of the province of Piacenza, was once consumed mainly during the grapes harvesting period.
Ingredients: grape juice, white flour, sugar.
Preparation: Add to the must or grape juice, passed through a sieve, a little 'sugar, then add the flour well diluted in the proportion of one tablespoon per cup of liquid, mix well, put the pan on the heat and let boil, stirring with a wooden spoon, for at least ten minutes. Pour into a bowl or in the molds and let cool.
Area of production: The entire province of Piacenza.
