Pancetta e piselli (bacon and peas)


Preparation. Chop 100 grams of bacon and cut the rest into small pieces, chop the onion and fry in butter. Add the chopped bacon and cook for 5 minutes. Add the tomato sauce and continue cooking for a few minutes, then add the remaining bacon and peas. Cook by adding small amounts of water when necessary.
Ingredients (serves 6). Shelled peas 500 g, rolled bacon 500 g, tomato sauce, onion 1, butter, salt
Area of production. Province of Piacenza.
A bit of history. This dish was typical of the time of harvesting and threshing in the countryside of Piacenza.
