Piccola di cavallo

 

Traditional dishes typical of the province of Piacenza in minced horse meat that is cooked with various herbs and spices, and eaten hot or too cold. The appearance is very similar to the ragout, red-brown color typical of cooked meat with pieces of tomato and red pepper.
Ingredients: Horse meat (various cuts such as lean loin, pork lard, tomatoes, red peppers, pepper, rosemary, basil, onions, garlic, parsley, dry white wine and salt.
Preparation: trimming meat, wash the tomatoes and peppers, transfer the meat in a mincer shredder to medium-fine grain, olive oil; sauté the chopped onion and diced bacon with garlic and parsley, add minced horse meat, cook with low heat for about 1 hour by adding white wine or broth, pepper and salt. Add the tomatoes and peppers cut into strips and simmer for about 30 ' and then  add rosemary or basil and garlic and cook over low heat for 15 '.
